Description: Easy Andhra Style Red Chilli Pickle Recipe Ingredients: Ripe Red Chillies or Fresno Peppers (wash, dry and remove the stalks) - 300 gms Tamarind (remove tough fibers) - 90 gms Sea Salt - 90 gms Turmeric Powder - 1/2 tsp Kashmiri Red Chilli Powder - 1 Tbsp (Optional) Tempering: Peanut/ Sesame Oil - 1/2 cup Mustard Seeds - 1/2 tsp Cumin Seeds - 1/2 tsp Dry Red Chillies - 4 no Garlic - 4 no Fenugreek Seed powder - 1/2 tsp (dry roast fenugreek seeds and powder) Mustard Seed Powder - 1/2 tsp (dry roast mustard seeds and powder) Procedure: 1)Wash the fresh ripen red chillies, dry them using a paper towel or a cloth.Remove the stalks and discard them. Roughly chop the red chilli peppers and keep them ready. 2)Remove the fibres and dirt from the tamarind and keep it ready. 3)Into a clean and dry jar, add tamarind and sea salt and grind coarsely. Crushing them first helps the chillies to grind properly. If we add altogether, they do not get crushed properly. 4)Add half of the red chillies,turmeric powder,red chilli powder (as the red chillies are not that spicy) and blend it coarsely. 5)To this paste, add the remaining red chillies and blend to a coarse paste. Don't add any water. 6)Transfer the content to a clean, sterilized jar with a tight fitting lid.Cover it and rest for 24 hours.Resting time ignites the pickling process. 7)For tempering add peanut oil or sesame oil but not sunflower oil to increase the shelf life. 8)When the oil is hot, add mustard seeds & jeera. After they sizzle add red chillies & chopped garlic. When the garlic becomes brown, add curry leaves, hing and add the red chillies mixture. To this add roasted fenugreek and mustard seeds powder. 9)Fry for a minute on low flame and turn off the flame. After it comes to room temperature store it in a clean and sterilized glass jar. 10) Serve it with hot steamed rice and ghee or goes well with curd rice also.
